Butterfly Chicken & Bread Rolls Ending Up With Dinner

Decided to do a little cooking today. Nothing flash just some good old bread rolls and a butterfly chicken.

Used a 10" oven (5 HB underneath and 15 on top) for the rolls and a 12" oven (6 HB underneath and 18 on top) for the chicken

To butterfly the chicken I removed the backbone with a pair of kitchen shears

Then removed the breastbone and flattened it out

Light spray with olive oil then sprinkle both sides with a combination of herbs. I used paprika, marjoram, basil, rosemary, oregano, parsley & thyme. This gives an Italian taste.

Lifting the lid for a look after half an hour

Cooked to perfection with a lovely crispy skin

After all that cooking I was mighty hungry so cooked up some mashed potato, steamed carrots and brocolli and gravy for a mountainous meal. Yummmmmmmmmmmmmm :)

:+ :+ :+ :+ :+ :+ mmmmm, looks great Derek.

Cooked in the camp oven for the first time yesterday...was not feeling confident so tried a packet mix self saucing sticky date pudding. Turned out surprisingly well...Im not a big fan of packet mixes but I figured if it didnt work I could blame the packet mix. It was great to lift the lid off the camp oven and find that the pudding had turned from a batter to something mroe edible.

Will try my own creation next time instead of something from a packet, but will be a while before I try something like this chicken dish. :lol:

I like doing the individual sticky date puddings. Served with butterscotch sauce and dollop cream

Here is the recipe

INDIVIDUAL STICKY DATE PUDDINGS WITH BUTTERSCOTCH SAUCE

INGREDIENTS
¾ cups coarsely chopped dates
2/3 cups water
1 teaspoon bicarbonate soda
1 teaspoons cinnamon
40 grams butter
1/3 cup castor sugar
1 egg
3/4 cup self raising flour

SAUCE
½ cup brown sugar
100 grams butter
¾ cups cream

METHOD
Combine dates and water in a small camp oven and bring to boil. Remove from heat and soda. Stir and allow settling and then stirring in cinnamon. Cream butter and sugar in a bowl then gradually add eggs one at a time. Stir through sifted flour until well combined then add in date mixture. Spoon mixture into muffin pan, place the pan on a trivet in a preheated camp oven and bake for 25 minutes.

To make sauce combine butter brown sugar and cream in small camp oven, stir over heat without boiling until sugar dissolves. Simmer until sauce thickens.
