Quickest (edit, ok, maybe not the quickest )
and easiest soup evaaaar:
1 Jar Leggo's Tomatoe paste
1 LARGE pot. Think mines about 5L
1 smaller pot (for cooking pasta)
1/2 a bunch of cellery
Almost a full bunch of parsely
1/2 an onion
1/2 a dozen carrots, peeled, either whole or quartered
Chop up the onion real fine, and brown it lightly with some oil. Then throw in the carrots, and celery, and parsely (chop some, maybe 1/2 of the parsely up, diced). Let this simmer for a bit then throw in all the tomatoe past and quickly add water stiring. Then to get all the paste up I add water to the jar and 'shake it all about'
. Bring it to a boil and then let it cook for about 1/2hr just under boiling heat, and serve with pasta.
