Special Potato Cake

SPECIAL POTATO CAKE

4 large potatoes, grated
1 large onion, chopped finely
1 large egg, beaten
parsley, fresh or dried
oil for frying

1. In a large bowl combine grated potatoes, onion, egg, parsley, salt and pepper and mix well.

2. Heat the oil in a large frying pan, add the potato mix that has been into a large cake and fry until the underside is firm and brown.

3. Remove the pan from the heat and gently slide the cake onto a plate. Place the frying pan over the plate and very carefully turn the pan and the plate upside down so that the cake is in the pan with the uncooked side down. Cook until firm and brown and serve immediately.

This is a very easy dish to make and is simply delicious with bacon or tinned ham and pineapple rings or any form of vegetables.

we do these often when camping, great with steak. One tip i will share, is to squeeze the grated potatoe so that you remove as much of the moisture as you can. You should find better results.

yep, was about to add that! (before adding egg and any other ingredients) We just make them approx 150mm wide (diameter) and flip them with a normal 'flipper'. We also don't put onion or parsley but have added carrots and peas to make 'bubble and squeak's. We call ours 'mock fish'... I don't know why!

Mum often made these when we were kids and often added left overs,she called them potato white bait.They are also yummy with prawns or crab added.

We call it bubble and squeak too. Dunno why - comes from the Irish side of the family

B&S to me is more about left over vegies, peas, carrots etc. But hey to each his own. Both are very nice.
