Date & Ginger Loaf

Postby Derek Bullock » Sun Aug 23, 2009 9:40 pm

Fired up a camp oven this afternoon and cooked up a variation of the Bungleboori Bread recipe that I have been using for quite some time. Turned out quite good.

INGREDIENTS
2 cups Self Raising Flour
1 teaspoon baking powder
3 teaspoons castor sugar
100 grams chopped dates
100 grams chopped glazed ginger
300 ml ginger beer

METHOD
Mix dry ingredients and fruit well. Pour ginger beer into a bowl and mix in the dry ingredients one large spoonfull at a time until all is well mixed. Place into a well greased loaf pan and bake in a medium/hot oven for 35 minutes. I used a 12" Lodge oven with 6 Heat Beads® under and 18 Heat Beads® on top in a ring.

Mixture going in the oven

Count the number of Heat Beads® and note the ring around the lid

HOW'S THAT FOR CAMP OVEN TUCKER!!!

I have seen them at BBQs Galore Titch....

Think from memory it is a Weber product.

Looks good Derek!
Its amazing what a camp oven can cook.

As for the head bead lighter thing. I've got the older style one and thats worth its weight in gold (I actually use it when starting a camp fire too just to get a small coal set going when its wet and windy) - whats the difference between that and this newer style one? what are the benefits?

Looking back through some old threads and missed this. I guess it's a bit like comparing a VN Commodore to the new one. Hehehehehehehehe.
