Found this in my camping recipes today.....


COCONUT CHICKEN

Ingredients
1/2 kilo chicken thigh fillets
1 cup of peas
couple of potatoes cut in chunks
carrot cut in chunks
chopped garlic - as much as you like
1 large chopped onion
4 tablespoons tomato paste
350 gm can coconut cream
1 cup water
corn flour to thicken
pepper to taste

Method
Cut chicken in bite size pieces. Place chicken, peas, potatoes, carrots and onion in camp oven. Mix together coconut cream, tomato paste, garlic and water. Pour over other ingredients in camp oven. Season to taste.

All in the pot ready to go

MEATLOAF WITH BARBECUE SAUCE

Ingredients:
1 kg minced steak 1 tabs chopped parsley
1 cup breadcrumbs 1 egg
2 onions ½ cup milk
2 teas curry powder ½ cup water

Method:
Combine minced steak, breadcrumbs and finely chopped onions, curry powder, parsley and lightly beaten egg in bowl. Beat until mixture is well combined. Gradually add milk and water. Continue beating until mixture is very smooth.
Shape meat mixture into loaf, place in greased baking dish.
Bake in moderate oven 30mins. Remove from oven, carefully pour off any excess fat. Pour sauce (recipe below) over meatloaf and return to oven. Bake for further 45 mins basting frequently with sauce.
Serve hot with vegetables or cold with salad.

Sauce:
½ cup water .
½ cup tomato sauce
¼ cup Worcestershire sauce
2 tabs vinegar
¼ cup brown sugar
1 teas instant coffee powder
30gm butter
2 tabs lemon juice

Method:
Combine all ingredients in saucepan and bring slowly to boil. Reduce heat and simmer for 5 minutes
