One Pot Lamb Curry

One Pot Lamb Curry (can use chicken if preferred)

2 apples, scrubbed, peeled and chopped
2 onions, chopped
2 cups diced lamb, cooked
2 cups beef or vegetable stock
4 tsp good curry powder, or to taste
2 cups water
1½ cups uncooked brown rice
4 tbsp golden raisins
Bottled chutney (optional)
Shredded coconut (optional)
Chopped peanuts (optional)
Grated apple (optional)

1. Heat a little oil in a pan and cook onion and apple until they soften, about 5 minutes.
2. Stir in curry powder and meat, cook for another minute or two.
3. Add stock, water, raisins and rice. Simmer, covered, until the rice is cooked, about 25 minutes for white rice or 45 minutes for brown rice.
The worst day camping still beats the best day working
