,Note please, I am not an expert on ice etc, but here is my take on it.
Dry ice, as it so called melts (actually becomes gas not water ) is not wet so food does not become soggy.
But an Esky full of dry ice hates being opened all the time,also can burn a person badly.
We used dry ice for transporting food a long distance in heat, no soggy bits,then putting the food in a fridge type atmosphere.Even in with wet ice.
Wet ice lasts longer when being opened as the water stays chilled as well.
Wet ice is cheap, dry is expensive.
With the age of these vacuum sealers ( no soggy food ) I see no value, unless transporting food a long distance undisturbed, for using dry ice.
