Fruit Slice

Going through my old cookbook today and came across this old favourite of mine and thought you may like to try it. It is not only very yummy but also very healthy...

Fruit Slice (fat & sugar free)

1 cup wholemeal SR Flour
½ cup coconut
1 cup fruit (mixed if preferred)
1 cup unsweetened juice (skim milk if preferred)

Combine all ingredients, mix well. Press into sprayed lamington tray and bake in moderately slow oven 40 – 45 mins.

Cut into squares while still warm

Great for the kids lunch boxes too.....

This ''Fat'' boy might just try this one Gypsy.....How important is it to use the ''wholemeal SR Flour'' ????
....Can that be substituted

I made this slice. Really easy to make and yummy too. :grin: I made it with milk as I didn't have any juice. Might try it with juice next time. I don't think it would matter if the flour was wholemeal or not - it would just be a bit healthier.

Tracy's right Rosco....can substitute normal flour if you wish.

A job for the weekend.......been reading bad reports on that wholemeal flour....seems its not so good for you after all......
As far as the juice is concerned....Well...I just happen to have heaps of that. (pineapple...of coarse..lol)
