I reckon that's a hard one Dave!. Best chance for fish would be salt water? but i really don't know of any bush type camps along salt water. Probably plenty of caravan parks but that would probably mean no fires. Might be some up the coast... like Inskip Point you can have fires and there's calm water, Tin Can Bay? (i've never been there), Woodgate was nice enough, not sure about fires there.
I'm a bit hooked on fresh water at the moment, some of the dams are really nice places to cruise around and fish the old treed areas at the back end of the dams, and it's usually quiet in the those areas. You'd need a fishing permit also ($35 a year that covers all Qld dams). I've only been to Somerset, Borumba, BP and Wuruma Dams, but they are all pretty nice. Somerset's a bit of a touristy park but still ok on quiet weekends. You can't camp beside the water at Borumba so that's a shame. Awoonga is a nice lake, but don't camp at the caravan park. I want to check out the free bush camp but haven't made it there yet.
Not sure about fresh water creeks, i'm sure there's a few. Sundown NP might be worth a try but maybe not with the kayak, it's just a creek. I'm not that familiar with creeks or dams down south, probably some nice stuff out past Warwick? I think i'll try get to Sundown NP again, was a nice place for camping.
