Bush damper


Can Beer, any brand.
Self Raising Flour to make a good dough. (Found that different brands rise to different levels. When you cook the first damper, take note of approx how much flour you use. Then use same amount, (approx), for the rest of that bag).

Plenty hot coals.

Mix the flour/damper till it is "doughy" and is on the point of "sticking" to your fingers.

Flour the oven.
Put the dough in

Layer coals in bottom of a hole, place oven in centre of hole
Surround and cover oven with more coals.

Go away for about 40-45 minutes,

lift oven out, and carefully lift lid.

If it need to, put the oven back topping with coals according to where needed.

When brown, remove from oven CAREFULLY.

remeber the oven is VERY hot, and very fragile when hot.

let cool

Break the damper into bits, butter and smother with "dingaling joy".

Enjoy.

ITALIAN STYLE DAMPER FOCCACIAS

I started this thread so guess I better post on it. Here is something a little different you can try in your camp oven. Give it a go.


ITALIAN STYLE DAMPER FOCCACIAS

INGREDIENTS

Two cups self-raising flour
Two teaspoons baking powder
Pinch salt
Milk
Half cup grated tasty cheese
Half cup chopped sun dried tomatoes
Good sprinkling of Italian herbs
Sliced black olives

METHOD

Mix flour, baking powder, salt, tomatoes, cheese, herbs together in a bowl. Mix in enough milk to make a soft wet dough. Divide into four portions and place on a well-greased and floured tray. Sprinkle some sliced olives on top and place in a preheated camp oven. Place the oven on a bed of coals and place a good shovel full of coals on the lid.

Takes about 35 minutes to cook.

RUM AND RAISEN DAMPER

INGREDIENTS


Two cups self-raising flour
Two teaspoons baking powder
Pinch salt
Half cup sugar
Cup raisins soaked in rum (The longer the better, at least overnight)
Milk

METHOD

Combine flour, baking powder, raisins, sugar and salt in a bowl. Mix in enough milk to make a soft dough. Form into a round shape and place on a well-greased and floured tray. Place in the preheated camp oven and cook for about 30 minutes.

CAMP OVEN CHRISTMAS CAKE

An oldie but a goodie.

INGREDIENTS
1 cup self raising flour
395g tin condensed milk
375g packet dried mixed fruit

METHOD
Preheat oven. Mix ingredients together really well, pour into a well greased cake tin. Bake for 45 minutes. Cool in pan.

I got a bit fancy with this one and decorated it with pecans and glaced cherries.
