Damper / Scone Recipe

I came across this recipe a while ago for damper.

3 cups Self Raising Flour
1 teaspoon of baking powder
375ml ( a can) lemonade

Mix it all together and cook for about 20 mins. I then put them into a cake tin and into the camp oven, or at home a 180 oven.

The other day someone gave me a variation which was for scones which was

3 cups SR flour
1 cup of cream
1 can of lemonade

Again mix it well, don't knead as you will lose the air from the lemonade, and put them out in a dish shaped as balls. They probalby look like rock cakes rather than scones, but they do taste good especially hot and fresh.

Very popular with the kids. Here is my attempt from the other day at home.

I use to work with a lady who was a celiac, and use to I think do a mix of corn flour, rice flour and potato flour (?), instead of flour in traditional recipes. To be honest it was a bit heavier than normal (mud cake consistency for a sponge).

Its a pretty simple recipe so you might want to just expereiment and see how it goes. I heard a myth that Diet Lemonade is fizzier so that might compensate it.

Yep, celiacs :(

I've only just found out after weeks of feeling sick and losing lots of weight. Apparently most people don't find out until they're older, however i'm actually saving lots of money because we can't just go to the local takeaway anymore...or KFC, maccas, hungry's, pizza etc i have to be organised with my groceries ;)

I never eat a lot of flour/bread stuff at home anyway so i don't miss it. I just can't buy a snack anymore. However i must say that it's like someone's flicked on a lightswitch to my life as i don't get tired anymore, don't feel sick all the time (which i thought was normal), and i'm much happier so i don't mind that i miss out on some foods :)

Our local Flour mill sells scone mix, just add water or lemonade whatever.

Jeeps I'm pretty sure you can still eat KFC cause its corn flour.
One of my mates who is celiacs used to eat it all the time cause it was about the only "fast food" that he could eat.

Kel is suspected celiacs also - but she doesnt look after herself with it. I always am on her back about it though.
